A credit book for bakeries
Most of a bakery’s credit is the bread that goes out every morning, and the bill is usually settled once a week. In Baki Fast you write each delivery with counts and prices, take off what comes back and collect at the end of the week with one statement.

How credit works at a bakery
Before sunrise, bread leaves for cafés, restaurants, corner shops, school canteens and staff kitchens. Each customer takes a slightly different amount each day: more at the weekend, nothing when the school is closed. Most pay weekly; schools and companies often pay monthly.
With shops there is also the bread that comes back unsold. The account is only right as “delivered minus returned”.
What usually goes wrong
- Count disputes: the driver says 40 were dropped off, the restaurant says 35 arrived. Without a record, both sound right.
- The driver’s notebook: deliveries are written in a book in the van, copied again at the bakery, and lost along the way.
- Mixed prices: white loaves, wholemeal, rolls and pastries all cost different amounts; one lump sum never adds up.
- Flour debt: what you owe the mill or flour dealer is tracked on the same scrap of paper.
Setting up a bakery book in Baki Fast
- Add every café, restaurant, shop and canteen as a customer.
- Write each delivery with item lines: “40 × loaf × 0.60”, “20 × rolls × 0.25”. Each product keeps its own price.
- If bread comes back in the evening, write it as a Return: tap Take payment, pick Return under Kind and add a note such as “5 loaves”. It comes off what they owe, stays out of the till and shows on its own in the statement.
- Give weekly customers a one-week due date. On Saturday, just check the overdue list.
- At the end of the week, open the customer’s statement for those dates and send it as a PDF, or print it as an 80 mm slip with Print Fast.
- Add your flour supplier as a supplier: sacks you take are a purchase, money you pay is a payment.
A weekly message for a café
Good morning Daniel, this is Golden Crust Bakery. From 28 October to 3 November we delivered 214 loaves and 60 rolls; after returns the total is 346. The day-by-day list is attached. Have a great week!
A bakery’s costs are heavy too: flour, yeast, fuel for the oven and the van. Write them in the cash book with a category and the day summary shows what should be left in the till. With Pro, monthly costs such as rent and wages can be written automatically each month.
If your delivery driver also needs to write in the book, Pro’s cloud sync opens the same book on their phone. An added phone sees the whole book and can write entries, so only add people you trust.
Questions
Do I have to write the same delivery every day?
Each delivery is its own entry, but writing one with item lines takes a few seconds. Enter the count and price and the total is done for you.
A school canteen pays monthly. What should I do?
Give the canteen’s entries a one-month due date and send the statement for that month at the end. See how due dates work in credit tracking.
Does Baki Fast issue invoices?
No, Baki Fast does not issue invoices. If a company customer needs one, use your invoicing software and keep deliveries and payments in Baki Fast.
